Jasen Post

 

 

Originally from Big Rapids, Michigan, Jasen moved to Southwest Florida in 1990 where he continued to further his culinary skills at the Outrigger Beach Resort on Ft. Myers Beach.  “I knew then that this is where I wanted to be!”  Four years later he worked under the tutelage of great German Chefs Lothar Moese and John Horner III at local country clubs. “After twelve years, I felt it was time for me to get my own kitchen and Big Hickory Seafood Grille gave me that opportunity.”  Two year later Jasen went back to country clubs to gain further culinary experience in worldwide cuisines.  “I have never held a position anywhere more than once; however, when given the opportunity to come back to Big Hickory Seafood Grille as Executive Chef, it was an easy decision, because I feel at home.”  “I was never as happy as I was when I was cooking near the water.”

When asked his specialty, Jasen states “I have been so lucky to have worked with some of the best and I have taken at least one thing from each of them.”  Jasen combines the old with the new, progressive yet traditional.  He has had great success in creating lighter sauces while maintaining the rich taste.   Like most of today’s talented culinary masters, he is young, sure of himself, and definite in his gastronomic beliefs.
